Easy and Delicious Champagne Cocktails

January has us on a champagne campaign here at Pretty Happy Love and what better way to celebrate the new year and engagement season than with some champagne cocktails! Whether it be for brunch, a ladies lunch, or just celebratory drinks after work, we’ve got you covered with our three favorite champagne cocktails that will please even the pickiest person in your entourage.

Berry Bellini
OK maybe this one is cheating a little bit because technically prosecco is sparkling wine and not champagne but for the ultimate in fruity perfection, berry bellinis offer a sweet and refreshing take on the champagne cocktail! This delicious drink is super easy to assemble and an absolute must for any summer party!

Ingredients
2 containers of fresh raspberries
8 oz. rhubarb
½ cup of sugar
½ cup of water
1 bottle of chilled prosecco

Directions
In a blender, combine raspberries, rhubarb, sugar, and water, reserving a few berries for garnish. Puree until completely smooth.
Strain the mixture through a fine mesh sieve and discard pulp.
Add 1 to 2 tablespoons of mixture to champagne flutes and top with prosecco and raspberries for garnish.

Amer Mousseux
Brightly bitter and a little tangy, the Amer Mousseux cocktail will leave guests grinning from ear to ear with its unique flavor. Lovers of italian liqueurs and oranges alike will go gaga over this creation.

Ingredients
½ oz Campari
½ oz orange juice
1 oz Cynar
Chilled champagne
Orange twist for garnish

Directions
Fill a cocktail shaker with ice. Add the Cynar, Campari and juice and shake well.
Strain into a chilled flute, top with the Champagne and garnish with the twist.

French 74
Is it possible to compile a list of champagne cocktails without mentioning the French 74? Probably not. As classic as it delicious, the French 74 combines all the makings of a great cocktail into one fizzy and refreshing sip.

Ingredients
1 ½ oz. vodka
½ oz. lemon juice
Splash of simple syrup
Chilled Moët & Chandon Champagne
Cherries for garnish

Directions
Combine vodka, lemon juice and simple syrup over ice and shake.
Pour into champagne flute and top with Moët & Chandon.
Add cherry on top for garnish.
